Ingredients
- 400 g pre-cooked chicken, sliced
- 1 tablespoon vegetable oil
- 1 red pepper, sliced
- 1 yellow or green pepper, sliced (or another red if cheaper)
- 1 onion, sliced
- 1 teaspoon mild fajita seasoning (or mix below)
Simple Fajita Spice Mix
- ½ tsp paprika
- ½ tsp ground cumin
- ½ tsp garlic powder
- 5 tortilla wraps
- Optional: small handful grated cheese or spoon of yoghurt
Chef's Tip
Always wash your hands very well before cooking or baking.
Method
1. Heat the pan
Put the pan on the hob and add the oil.
Turn the heat to medium–high.
2. Cook the vegetables
Add the onion and peppers.
Stir gently for 3–4 minutes until they start to soften.
3. Add the chicken
Add the cooked chicken to the pan.
Stir slowly so everything mixes together.
4. Add the seasoning
Sprinkle over the paprika, cumin and garlic powder.
Stir well so everything is coated.
5. Cook until hot and sizzling
Keep cooking for 3–4 minutes, stirring gently.
You should hear a gentle sizzle — not too loud.
6. Warm the wraps
Push the filling to one side of the pan or remove it briefly.
Warm each wrap in the pan for 20–30 seconds each side.
Stack on a plate.
7. Build your fajita
- Adds some chicken and veg
- Adds yoghurt or cheese if using
- Folds into a wrap
