Ingredients
5 tortilla wraps
4 eggs (cooked as one thin omelette)
1 tablespoon vegetable oil
Vegetables & Fillings
200g Pork Mince
1 bunch baby spinach
1 cup mushrooms (pre-sliced)
1 sprinkling grated cheese
Turkish-Style Spices (mild, warm – not hot)
½ teaspoon smoked paprika
½ teaspoon ground cumin
½ teaspoon dried oregano or dried mint
Black pepper (optional)
Chef's Tip
Always wash your hands very well before cooking or baking.
Keep stirring slow and calm to ensure there is no splashing or fast movements.
Method
1. Cook the pork mince
Heat the pan on medium heat with a little oil.
Add the pork mince and sprinkle over paprika and cumin.
Break it up with a spoon and cook for 5–6 minutes until fully cooked (no pink).
Scoop into a bowl and set aside.
2. Make the spiced egg layer
Crack eggs into a bowl.
Add oregano or mint and a pinch of pepper.
Mix gently.
3. Cook the egg
Add a little oil to the pan.
Pour in eggs and tilt pan to make a thin layer.
Cook without stirring until set.
Slide out and cut into strips.
4. Cook the vegetables
Add mushrooms to the pan and cook slowly for 5 minutes.
Add spinach and cook until just soft.
Turn off the heat when the spinach starts to wilt.
Remove it from the pan.
5. Toast the wraps
Warm wraps in the dry pan, 30 seconds each side.
Stack on a plate.
6. Build your wrap
Pork mince
Egg strips
Vegetables
Cheese
Then fold into a wrap and enjoy!
