Ingredients
Chicken
2 chicken breasts (cut into chunks)
1 tablespoon olive oil
1 teaspoon dried oregano
1/2 teaspoon paprika
1 garlic clove (crushed)
Juice of 1/2 lemon
Pinch of salt
Rice
1 cup rice
2 cups water/Chicken Broth
Pinch of salt
Fresh Coriander
Salad
1/2 cucumber (chopped)
1 tomato (chopped)
1/2 red onion (finely sliced)
Iceberg Lettuce
Optional: peppers or olives
Yogurt Sauce
3 tablespoons plain yogurt
Small squeeze of lemon
pinch
of dried mint or oregano
Chef's Tip
Always wash your hands very well before cooking or baking.
Method
1. Cook the rice
Add rice, water, and a pinch of salt to a pan.
Bring to the boil, then simmer for 10–12 minutes until soft.
2. Marinate the chicken
Mix oil, oregano, paprika, garlic, lemon juice, and salt.
Coat the chicken and leave for 10 minutes.
3. Prepare the salad
Chop cucumber and tomato, slice onion thinly.
4. Cook the chicken
Fry in a pan on medium heat for 6–8 minutes until cooked through and golden.
5. Make the sauce
Mix yogurt with lemon and optional mint/garlic.
6. Assemble the bowls
Spoon rice into bowls
Add chicken and vegetables
