Green Chilli and Coconut Salmon

A Thai inspired fusion of spicy, sweet, sour and rich flavoursome salmon!

Ingredients
4 Salmon Fillets
200ml of Coconut Milk (100% Coconut)
The juice of 1 Lime
2 Garlic Cloves
1 Green Chilli (Carefully remove the seeds)
1cm Cube of Fresh Ginger
1 Pack of Fresh Coriander (Small Supermarket Packet)
Chef's Tip
Always wash your hands very well before cooking or baking.
Serve this salmon with Jasmine rice and stir-fried asian vegetables for a delicious, healthy dinner.
Method
STEP 1
Put all the ingredients into a blender (except the salmon!!), and blend until smooth.
STEP 2
In a sheet of baking paper, place a fillet of salmon, and pour a tablespoon of marinade onto the salmon. Be careful it doesn't run off!
STEP 3
Follow the wrapping technique in the video to individually wrap each piece of salmon. Put them on a baking tray.
STEP 4
Pre-heat the oven to 180°C, and bake the salmon for 12 minutes.
STEP 5
Take the salmon out of the oven, and carefully unwrap each piece of salmon to serve on a plate. Be careful of the steam as you unwrap them!
