Carrot Soup

This a super easy soup that is great for starters, or to have on a cold winters lunch. Eat with chunky buttered bread!

Ingredients
2 Teaspoons of Butter
1 Teaspoon of Extra Virgin Olive Oil
1 Small Onion
1 Cup or 50g of Celery
1 Garlic Clove
1 Teaspoon of Thyme
6 Carrots
1 Cup or 250ml of Water
500ml of Vegetable Stock
A pinch of Salt and Pepper
Chef's Tip
Always wash your hands very well before cooking or baking.
Method
STEP 1
Do your prep! Peel and Chop your carrots, chop your celery, onion and garlic.
STEP 2
In a thick bottomed pan, add the butter and olive oil. Turn on the heat to medium.
STEP 3
Add your onions, celery and garlic. Stir and sauté for 5 minutes.
STEP 4
Add the carrots, water and vegetable stock.
STEP 5
Simmer the vegetable mix on medium - low for 25 minutes.
STEP 6
Using a blender, or a stick blender, blitz the vegetables and liquid into a smooth soup. Be careful, it will be hot!!
STEP 7
Add salt and pepper to your taste and serve!
